A well-behaved lava cake

If you’re living in this century, half your friend group is probably gluten-free. Is it the glyphosate? We may never know. What I do know is that I found myself across from the best gluten-free brownie of my life in Turks & Caicos last December. Two of my closest friends can’t have gluten, and one of my love languages is making things for people — so I had to get the recipe. In the name of seeing your friends smile.

Up I went to the head chef. A little charm, a few bats of the lashes, and the recipe was in my inbox the next morning. His one non-negotiable: Callebaut Belgian chocolate. I tested milk-to-dark ratios and landed on dark alone. What you get is rich, fudgy, holds its shape, and stays moist for days.

It’s like a lava cake that decided to behave. Same decadence and flavor, far less mess.

The Brownie

8x8 pan · 175°C / 350°F · 30–35 minutes

Ingredients

Use a kitchen scale — baking requires exact numbers.

  • 240g dark chocolate
  • 160g salted butter
  • 200g granulated sugar
  • 4 eggs
  • 100g flour (gluten-free if you like)

Method

  1. 1.Heat the oven to 175°C / 350°F and give it a full 15 minutes so it’s truly ready. A cold oven bakes unevenly.
  2. 2.Break the chocolate into pieces and cut the butter into chunks. Put both in a glass or metal bowl — not plastic.
  3. 3.Fill a saucepan with about an inch of water and bring to a gentle simmer (small bubbles, not a boil). Set the bowl on top without letting it touch the water. Stir until the chocolate and butter are melted and glossy. This is a double boiler: gentle heat so nothing burns.
  4. 4.Take off the heat and wait 10 minutes. Hot chocolate will scramble the eggs, and that is not the texture we seek.
  5. 5.Place a damp kitchen towel under the bowl so it doesn’t slide. Whisk the eggs and sugar hard for 3–4 minutes until pale and thick — it should fall from the whisk like honey. Put on a song. You will look at the clock and think you can’t possibly have two minutes left. You do. Keep going. This is the air that gives you the crackly top and the fudgy center. Stop when you see the ribbon or it turns cakey.
  6. 6.Slowly fold the cooled chocolate into the eggs, then gently fold in the flour until just combined. Don’t overmix or it goes dense.
  7. 7.Line an 8×8 pan with parchment, leaving overhang on two sides. Pour in the batter and smooth the top.
  8. 8.Bake 30–35 minutes. Every time I make these I think they need longer — the top will still look moist and a toothpick will come out wet. The edges should be set and the center should barely wobble. Rest in the pan at least 45 minutes (an hour is better) before lifting out. They’re still setting, and that’s the texture.
  9. 9.Lift out with the paper. Cut off the crusts — I don’t know anyone who actually loves the edge of a brownie — then cut into as many squares as your heart wants.
